Bile in gall bladder is composed of water, bile salts, bilirubin, fats and inorganic salts. Now, let’s understand the action of bile salt. Bile salt has two sides, hydrophilic and hydrophobic which is why it is considered as a surfactant.
Note: Surfactant is a matter which helps to reduce surface tension of a liquid when dissolved.
When bile is thin it helps in fat emulsification (a process where fat breaks). As seen in the above image the hydrophobic part is binding the lipid/fat facing towards it. And the hydrophilic part faces outward.
